At Dundee University, the dining hall throws away about three tonnes of food every week during term time. Most of it is barely touched: a sandwich with one bite taken, chips left to go cold, whole bowls of pasta. The kitchen staff who scrape the plates see this every day, and many of them say the waste hurts more than any poster about hunger ever could. The catering team, ironically, spends its best hours each week not cooking but carrying full bins to the loading dock. Last year the university tried something simple. It removed trays. Without trays, students could carry only what they could hold, and the amount of food thrown away fell by a third within a single semester. The change cost nothing. There were no fines, no apps and no lectures about sustainability — just a smaller plate area and a slightly longer queue. Students who served themselves smaller portions said they simply went back for seconds when still hungry, which suggests the tray was shaping choices, not appetites. Not everyone is pleased. Some students say the policy treats adults like children, deciding portion sizes for them. A few point out that students with heavy course loads now eat less simply because carrying is harder. One student newspaper called the tray ban "a cheap trick that shifts responsibility from the kitchen to the customer." The catering manager's reply is blunt: whatever the method, the result is real — less food in the bins and lower costs that are now spent on better ingredients. In her view, a policy that changes behaviour without costing anyone anything deserves to be judged by its results, not by its tone. Whether students forgive the method or not, few now argue with the arithmetic printed beside the bin scales each Monday.
